Carbon steel, being 99% iron, requires proper preparation to achieve non-stick properties. Follow these steps to season your pan for optimal performance and longevity.
- Gather Your Materials:
- Carbon steel pan
- High-heat, flavorless oil (e.g., sunflower oil)
- Paper towel
- Gas Stove Method:
- Apply a very thin layer of oil to the pan.
- Heat the pan on low, gradually increasing to high.
- Remove excess oil with a paper towel.
- Move the pan to ensure even heating, allowing it to smoke and develop a gradient black color.
- Repeat if desired.
- Oven Method:
- Apply oil to the pan and place it in a cold oven.
- Heat gradually, then remove excess oil.
- Continue heating for 50 minutes at max temperature.
- Check periodically for color change and remove to cool.
Remember:
- Handwash only; avoid the dishwasher.
- Prevent thermal shock by gradually adjusting heat.
- Avoid exposure to cold water immediately after heating.
- Acidic foods may degrade the seasoning; use a stainless steel pan for such dishes.
