  1. Gather Your Materials:
  • Carbon steel pan
  • High-heat, flavorless oil (e.g., sunflower oil)
  • Paper towel
  1. Gas Stove Method:
  • Apply a very thin layer of oil to the pan.
  • Heat the pan on low, gradually increasing to high.
  • Remove excess oil with a paper towel.
  • Move the pan to ensure even heating, allowing it to smoke and develop a gradient black color.
  • Repeat if desired.
  1. Oven Method:
  • Apply oil to the pan and place it in a cold oven.
  • Heat gradually, then remove excess oil.
  • Continue heating for 50 minutes at max temperature.
  • Check periodically for color change and remove to cool.

Remember:

  • Handwash only; avoid the dishwasher.
  • Prevent thermal shock by gradually adjusting heat.
  • Avoid exposure to cold water immediately after heating.
  • Acidic foods may degrade the seasoning; use a stainless steel pan for such dishes.
