Let us start by saying we really hope you do not rinse your mushrooms under running water. Black trumpets, yes, always. Everything else soaks up the water and steams in the pan instead of browning. Sweep the dirt, rinse the brush, sweep again. No water in the mushroom, no paper towel in the bin.

If you really must rinse, do it well ahead, spin them in the salad dryer and let them dry on a towel by the window.

Cleaning mushrooms before a sear
Chanterelles and other wild ones that come with a forest attached
Brushing flour dust off a proofing basket
