A salad dryer is as simple as it sounds. Wash your greens, put them in, spin the little thing, greens come out dry. The part that is not simple is why it matters. Oil and water do not get along. Add vinaigrette to wet leaves and all the oil slides to the bottom of the bowl while the leaves stay naked.

As Jesse Pinkman would have said, "Science, bitch!"

The LADJA team uses it for:

Drying greens before dressing them
Drying herbs before chopping, so they do not turn to mush on the board
Spinning rinsed mushrooms when we absolutely had to rinse them
