The Y-peeler is the only tool you should use to peel vegetables and fruit. There is no need to try anything else. The blade sits across the handle instead of in line with it, so your wrist does the work instead of your thumb, and it takes a thinner strip. This one is the Victorinox.

The LADJA team uses it for:

  • Peeling everything from potatoes to butternut
  • Shredding cabbage into fine strips
  • Peeling orange, lemon and lime zest in wide strips

Mixing bowl set cause they ‘re never enough. Offset spatula for turning things and plating. Wire rack. Can’t explain in words how important this is. Cheese cloth if you are a perfectionist. Microplane, the best zester out there. Metal dough scraper to protect your knife from dragging it on the cutting board when you pick up your diced veggies. Save this for your next “ok, what do I actually need in my kitchen?” moment.
Bisque-glazed shrimp, vegan mayo, crispy tuile. From a test event we did a while ago. Equipment used in order of appearance: - stock pot - ladle - chinois - mixing bowl - sauce pot - carbon steel pan - brush - microplane zester - measuring cup - non-stick pan - tweezers - kiritsuke knife - gastronorms (inox and PC) As for a recipe, below is some guidance: Clean the shrimp. Use the heads to make a bisque and play around with the flavour a bit. Once the bisque is ready, turn it into a glaze: put it in a heavy-bottomed sauce pot, reduce it fiercely, then add butter, lime juice and lime zest. Make a vegan mayo. Again, use your creativity to go further. Sauté the shrimp and glaze them with the reduced bisque. Make a crispy tuile if you want some crispiness – it helps with plating as well. Add something green on top for freshness. Finally, add a bit more of the reduced bisque on top. #ladjagr #homechef #homecook #homecooking
